About
Grades of Maple Syrup:
Maple
syrup is divided into two grades, A or B, based
on color and flavor.
The syrup is visually compared
to a set of color standards - the lighter the syrup,
the more delicate the flavor.
Grade
A is table grade and is divided into light, medium
and dark amber.
Grade B is darker than dark amber and is used for
cooking and reprocessing.
The
clarity and color of syrup usually depends on the
weather, frequency
of gathering, length
of storage,
and methods of boiling and straining.
The
lighter grades of syrup usually are produced earlier
in the season when colder temperatures
produce the purest sap.
The
dark amber syrup is preferred for cooking and baking
due to its stronger flavor.
